You need about 3 cups of flour, 6tbsps butter, 1tbsp salt, about 2 pounds of potatoes that are cut into chunks, 1 cup of carrots and peas, 2tbsp vegetable oil, 1 onion chopped into small pieces, 1tsp ginger grinded into a paste, 1tsp chili powder, juice of a lemon, fresh coriander leaves, and oil for frying to cook this dish. First of all you need to make the dough using the flour. To do this, you should mix the flour and salt in a bowl along with butter. You should keep adding water in teaspoons gradually during the process to make sure that it is blended well. You can use a food processor to mix it or use a pastry blender. You should form a ball with these constituents and knead it for a few minutes. Now you need to prepare the filling ingredients for which you should boil the potatoes first. Heat oil in a pan, add the onions, ginger paste, chili powder, lemon juice, and salt, and cook for a minute. Now add the carrot and peas into the pan and cook for about five minutes. Keep stirring the ingredients on low flame and then add the potatoes to the mixture. You should allow this combination to cool down a bit and then stuff it in the dough after dividing into ten equally sized balls. Fold it well and use a small amount of water to ensure it is tightly packed. Take a deep saucepan and fry the stuffed balls until it turns golden yellow. The Samosas can be served hot. The snack tastes good even if it is served cold.
